Inside the Good Grains bakery

Our Story

It started with a diagnosis.

Almost twenty years ago, a celiac diagnosis sent us looking for bread we could still love. Nothing on the shelves came close.

The bread we kept finding was a six-slice apology. Dense, crumbly, shipped frozen — the kind of loaf that fell apart before it could hold a sandwich. The kind that came with a permission slip from its own packaging.

We knew bread could be more than that. We’d grown up with it — the smell of a kitchen at sunrise, the crackle of a fresh crust, the simple privilege of a sandwich you didn’t have to apologize for.

So we taught ourselves to bake it. Not the way the gluten-free brands had told us we’d have to settle for — but the way bread is supposed to be. Sliceable. Sandwich-sized. Worth waking up for.

“If no one was going to bake the kind of bread we missed, we’d figure out how to do it ourselves.”

Today

A bakery, Local Grind, and a promise.

Good Grainsis now a fully dedicated gluten-free bakery in the heart of Heber Valley. Every product that leaves our kitchen is something we’d serve to our own family — because, almost every day, we do.

Our flagship is a full-sized sandwich loaf — the kind that fits a kid’s lunchbox and stands up to a grilled cheese. We also bake sourdough, rolls, muffins, brownies, cookies, and custom cakes. Up front at Local Grind, our cafe counter, we pull espresso shots and serve breakfast sandwiches all day on bread we baked at sunrise.

Our kitchen has never seen wheat. And every ingredient on the shelf was sourced gluten-free at the supplier — not just GF-friendly, not just GF-by-our-handling, but produced on dedicated lines before it ever reached us. End-to-end GF. For celiacs, that’s not a marketing line — it’s the difference between dinner and the emergency room.

What We Promise

The standards behind every loaf.

  • Dedicated facility

No wheat has ever crossed our threshold. Zero cross-contamination, by design.
